BLONDIES:
1 cup unrefined virgin coconut oil (melted)
2 cups organic evaporated cane juice
4 eggs
1 teaspoon vanilla extract
2 cups gluten free flour mix
1 teaspoon baking powder
1/2 teaspoon guar gum
1/2 teaspoon salt
1 cup chopped raw pecans (optional)
1 cup bittersweet chocolate chips/chunks
1/2 cup dried cranberries (optional)
Preheat the oven to 350 F. Grease a 9-by-13-inch pan. Mix the oil, sugar, eggs and vanilla. Sift the flour, baking powder, guar gum, and salt.
Combine, then fold in the cranberries and nuts, if using.
Bake for 25-35 minutes. Let cool for 1/2 hour to set before serving.
